  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 package (16 oz) potato gnocchi
  • 2 cups fresh spinach, roughly chopped
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until softened.
  2. Stir in the chicken, dried thyme, and parsley. Season with salt and pepper.
  3. Pour in the chicken broth, bring to a simmer, and cook for 5 minutes.
  4. Add the heavy cream and milk, stirring gently. Let it simmer for 10 minutes.
  5. Stir in the gnocchi and cook for 3-4 minutes or until they float to the top.
  6. Add spinach and cook for an additional 2-3 minutes until wilted.
  7. Taste and adjust seasonings if needed. Serve warm with crusty bread or salad.
