4 boneless, skinless chicken breasts
1 cup long-grain rice
2 cups chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
2 cloves garlic, minced
1 small onion, finely chopped
1 tbsp olive oil
1 tsp dried thyme
½ tsp paprika
Salt and pepper to taste
Fresh parsley (for garnish)
Instructions
Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, thyme, and paprika.
Sear chicken on both sides until golden brown, about 4–5 minutes per side. Remove and set aside.
In the same skillet, sauté garlic and onion until fragrant and softened.
Add rice, chicken broth, and heavy cream. Stir to combine, then bring to a simmer.
Place chicken breasts back into the skillet, cover, and cook on low for 20–25 minutes until rice is tender and chicken is fully cooked.
