  • ½ cup red wine
  • 1 cup beef broth (low sodium or no sodium added)
  • 1 cup crushed tomatoes
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • 1 pound fettuccine (uncooked), or pasta of your choice
  • 3 cups vegetable broth (low sodium)
  • 2 tablespoons parsley, chopped, for garnish
  • Parmesan cheese, grated, for serving

Instructions

  • In a large pot, cook ground beef over medium heat until browned.
  • Add chopped onion, carrot, celery, and minced garlic. Sauté until vegetables are tender.
  • Stir in dried or fresh oregano, red wine, and beef broth. Simmer for a few minutes to reduce slightly.
  • Add crushed tomatoes, salt, and pepper. Mix well.
  • Add uncooked fettuccine and vegetable broth. Bring to a boil, then reduce to a simmer.
  • Cook until pasta is tender and sauce is thickened, stirring occasionally to prevent sticking.
  • Garnish with chopped parsley and grated Parmesan cheese before serving.
