  • 2 large chicken breasts (sliced)
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 bell pepper (sliced, any color)
  • 1 small onion (sliced)
  • 3 garlic cloves (minced)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta (uncooked)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup chopped parsley (for garnish)

Instructions

  • Season chicken slices with 1 tablespoon of Cajun seasoning.
  • Heat olive oil in a large skillet or pot over medium heat. Cook chicken until golden and fully cooked. Remove and set aside.
  • In the same pot, sauté onion, bell pepper, and garlic until softened.
  • Add chicken broth, heavy cream, uncooked penne, and remaining Cajun seasoning. Stir well.
  • Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is cooked.
  • Stir in Parmesan cheese and cooked chicken. Adjust seasoning with salt and pepper.
  • Garnish with parsley and serve warm.

Notes

  • Use store-bought Cajun seasoning or make your own with paprika, garlic powder, onion powder, cayenne, and oregano.
  • Add extra veggies like spinach or mushrooms if desired.
