2 large chicken breasts (sliced)
2 tbsp Cajun seasoning
1 tbsp olive oil
1 bell pepper (sliced, any color)
1 small onion (sliced)
3 garlic cloves (minced)
2 cups chicken broth
1 cup heavy cream
8 oz penne pasta (uncooked)
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1/4 cup chopped parsley (for garnish)
Instructions
Season chicken slices with 1 tablespoon of Cajun seasoning.
Heat olive oil in a large skillet or pot over medium heat. Cook chicken until golden and fully cooked. Remove and set aside.
In the same pot, sauté onion, bell pepper, and garlic until softened.
Add chicken broth, heavy cream, uncooked penne, and remaining Cajun seasoning. Stir well.
Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is cooked.
Stir in Parmesan cheese and cooked chicken. Adjust seasoning with salt and pepper.
Garnish with parsley and serve warm.
Notes
Use store-bought Cajun seasoning or make your own with paprika, garlic powder, onion powder, cayenne, and oregano.
Add extra veggies like spinach or mushrooms if desired.
