  • 1 1/2 tbsp olive oil
  • 2 garlic cloves, finely minced
  • 1 onion, finely chopped
  • 500g/1 lb beef mince/ground beef
  • 2 tsp Italian herbs
  • 2 tbsp tomato paste
  • 400g/14 oz can crushed tomatoes (or tomato passata)
  • 1/2 tsp red pepper flakes (optional)
  • 1 1/2 tsp cooking salt/kosher salt
  • 1/2 tsp black pepper
  • 4 cups (1 L) chicken stock/broth, low sodium
  • 350g/12 oz fusilli, penne, elbow macaroni, or other short pasta
  • 3/4 cups thickened/heavy cream
  • Parmesan cheese, finely grated (for serving)
  • Parsley, finely chopped (optional, for serving)

Instructions

  • Heat olive oil in a large pot over medium heat. Add minced garlic and chopped onion, sauté until softened.
  • Add ground beef, cooking until browned. Stir in Italian herbs, tomato paste, crushed tomatoes, red pepper flakes, salt, and black pepper.
  • Pour in chicken stock and bring to a simmer. Add pasta and cook, stirring occasionally, until pasta is al dente.
  • Stir in thickened cream and cook for an additional 2-3 minutes, until the sauce is creamy and pasta is fully coated.
  • Serve hot, topped with grated Parmesan cheese and chopped parsley if desired.

Notes

  • Adjust the red pepper flakes to taste, or omit them for a milder dish.
  • Any short pasta can be used, but adjust cooking time as needed.
