This One Pot French Onion Pasta recipe is a flavorful, comforting dish with caramelized onions, creamy sauce, and melty cheese—all made in one pot for easy cleanup!

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 3 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tsp sugar
  • 8 oz uncooked fettuccine or linguine
  • 4 cups beef broth
  • 1 cup water
  • ½ cup heavy cream
  • 1 cup shredded gruyere cheese (or mozzarella)
  • ½ cup grated parmesan cheese
  • Salt and pepper to taste
  • Fresh thyme, for garnish (optional)

Instructions

  • Heat butter and olive oil in a large pot over medium heat. Add sliced onions, sugar, and a pinch of salt. Cook, stirring occasionally, until caramelized (about 20 minutes).
  • Add minced garlic and cook for 1-2 minutes. Deglaze the pot with balsamic vinegar and stir well.
  • Add uncooked pasta, beef broth, and water to the pot. Bring to a boil, then reduce heat and simmer, stirring occasionally, until the pasta is al dente and the liquid is mostly absorbed (about 12-15 minutes).
  • Stir in heavy cream, gruyere cheese, and parmesan cheese. Mix until the cheese is melted and the sauce is creamy.
  • Season with salt and pepper to taste, garnish with fresh thyme, and serve hot.

Notes

  • Use vegetable broth for a vegetarian version.
  • Swap gruyere with Swiss cheese or mozzarella if preferred.
  • For extra depth, add a splash of dry white wine when deglazing.
