Ingredients

Scale
  • 2 tbsp olive oil
  • 2-3 boneless, skinless chicken breasts (cut into chunks)
  • Salt and black pepper (to taste)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 3 cloves garlic (minced)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 can (14 oz) diced tomatoes (drained)
  • 12 oz penne pasta (uncooked)
  • 1 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Fresh basil leaves (for garnish)

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Season chicken with salt, pepper, garlic powder, and Italian seasoning.
  2. Sear chicken pieces until golden brown on both sides, about 5 minutes. Remove and set aside.
  3. In the same pot, sauté minced garlic for 1 minute until fragrant.
  4. Add chicken broth, heavy cream, diced tomatoes, and uncooked pasta. Stir well and bring to a simmer.
  5. Return chicken to the pot and cook for 15-20 minutes, stirring occasionally, until pasta is tender and sauce thickens.
  6. Stir in Parmesan cheese and red pepper flakes, adjusting seasonings to taste.
  7. Garnish with fresh basil leaves and serve hot.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • Substitute spinach or kale for added greens.
  • Best enjoyed fresh but can be refrigerated for up to 3 days.
