1 mini watermelon
1 English cucumber
Salad Dressing:
2 tablespoons avocado oil or olive oil
3 tablespoons maple syrup
2 tablespoons lemon juice
1 cup basil leaves, tightly packed
½ cup mint leaves, tightly packed
½ teaspoon sea salt
½ teaspoon black pepper
Instructions
Slice the peaches, mini watermelon, and English cucumber into bite-sized pieces.
In a large bowl, combine the sliced fruits.
In a blender or food processor, mix the avocado oil (or olive oil), maple syrup, lemon juice, basil leaves, mint leaves, sea salt, and black pepper until smooth.
Pour the dressing over the fruit mixture and toss gently to combine.
Serve immediately or chill in the refrigerator for 15-20 minutes before serving for a more refreshing taste.
Notes
For best results, use ripe peaches and a sweet mini watermelon.
