  • Fruits:
    • 3 peaches
    • 1 mini watermelon
    • 1 English cucumber
  • Salad Dressing:
    • 2 tablespoons avocado oil or olive oil
    • 3 tablespoons maple syrup
    • 2 tablespoons lemon juice
    • 1 cup basil leaves, tightly packed
    • ½ cup mint leaves, tightly packed
    • ½ teaspoon sea salt
    • ½ teaspoon black pepper

Instructions

  • Slice the peaches, mini watermelon, and English cucumber into bite-sized pieces.
  • In a large bowl, combine the sliced fruits.
  • In a blender or food processor, mix the avocado oil (or olive oil), maple syrup, lemon juice, basil leaves, mint leaves, sea salt, and black pepper until smooth.
  • Pour the dressing over the fruit mixture and toss gently to combine.
  • Serve immediately or chill in the refrigerator for 15-20 minutes before serving for a more refreshing taste.

Notes

  • For best results, use ripe peaches and a sweet mini watermelon.
