Ingredients

Scale
  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1/2 cup packed brown sugar

  • 1/2 cup creamy peanut butter

  • 1 large egg

  • 1/2 tsp vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin or line with paper cups.

  2. In a large bowl, cream together butter, both sugars, and peanut butter until light and fluffy.

  3. Add the egg and vanilla extract; mix well.

  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet mixture.

  5. Stir in chocolate chips.

  6. Scoop dough into prepared muffin tin, filling each cup about 3/4 full.

  7. Bake for 10-12 minutes or until lightly golden and set.

  8. Cool in pan for 5 minutes before transferring to a wire rack.

Notes

  • Use crunchy peanut butter for added texture.

  • For extra gooey centers, press a few chocolate chips into the top after baking.

  • Store in an airtight container for up to 5 days.
