Savor this slow-cooked Pepper Steak recipe made with fresh vegetables, tender beef, and savory seasonings, all prepared in a crock pot.

  • 2 lbs beef sirloin or round steak, sliced into strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 1/3 cup soy sauce
  • 1/3 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry for thickening)
  • 1 tbsp olive oil
  • 1 tsp black pepper
  • 1/2 tsp ground ginger
  • Salt to taste

Instructions

  1. Heat olive oil in a skillet over medium heat and sear the beef strips until browned on both sides.
  2. Transfer beef to the crock pot.
  3. Add bell peppers, onion, and garlic to the crock pot.
  4. In a small bowl, mix soy sauce, beef broth, Worcestershire sauce, tomato paste, black pepper, and ground ginger. Pour over the beef and vegetables.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. During the last 30 minutes of cooking, stir in the cornstarch slurry to thicken the sauce.
  7. Serve over steamed rice or noodles and enjoy!
