This Potato Kielbasa Soup is a hearty, savory dish combining tender potatoes, smoky kielbasa sausage, and vegetables in a rich broth. Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 lb kielbasa sausage, sliced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add the sliced kielbasa and cook until browned, about 4-5 minutes. Remove and set aside.
  • In the same pot, add onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.
  • Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, reduce heat, and simmer for 15 minutes until potatoes are tender.
  • Stir in the cooked kielbasa and heavy cream, and simmer for another 5 minutes.
  • Season with salt and pepper to taste, and garnish with fresh parsley before serving.

Notes

  • For a thicker soup, mash some of the potatoes before adding the cream.
  • Add smoked paprika or cayenne pepper for a spicy kick.
  • This soup freezes well and can be reheated without losing flavor.
