  • 1/4 tsp salt
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mini chocolate chips
  • 1/2 cup buttermilk

Frosting Ingredients:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
  • In another bowl, beat pumpkin, oil, granulated sugar, brown sugar, eggs, and vanilla until smooth. Gradually add dry ingredients to wet ingredients, mixing just until combined.
  • Stir in chocolate chips and buttermilk.
  • Divide batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  • Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  • For frosting, beat butter until creamy. Gradually add powdered sugar, vanilla, and heavy cream, beating until fluffy.
  • Frost the cooled cakes and layer them together.
