2 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp salt
1 cup canned pumpkin puree
1/2 cup vegetable oil
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1 tsp vanilla extract
1 cup mini chocolate chips
1/2 cup buttermilk
Frosting Ingredients:
1 cup unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla extract
2 tbsp heavy cream
Instructions
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
In another bowl, beat pumpkin, oil, granulated sugar, brown sugar, eggs, and vanilla until smooth. Gradually add dry ingredients to wet ingredients, mixing just until combined.
Stir in chocolate chips and buttermilk.
Divide batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
For frosting, beat butter until creamy. Gradually add powdered sugar, vanilla, and heavy cream, beating until fluffy.
Frost the cooled cakes and layer them together.
Notes
Ensure the cakes are completely cool before frosting.
You can substitute semi-sweet chocolate chips if preferred.
