This Reuben Quesadillas recipe is a creative spin on the classic Reuben sandwich. Featuring layers of corned beef, tangy sauerkraut, Swiss cheese, and Thousand Island dressing, all grilled in a crispy tortilla, it’s a quick and delicious meal perfect for lunch or dinner!

Ingredients

  • 4 medium flour tortillas
  • 1 cup corned beef, thinly sliced or shredded
  • 1 cup shredded Swiss cheese
  • ½ cup sauerkraut, drained
  • 4 tbsp Thousand Island dressing
  • 1 tbsp butter (for cooking)

Instructions

  • Spread 1 tbsp of Thousand Island dressing on one side of each tortilla.
  • On two tortillas, layer half the Swiss cheese, corned beef, and sauerkraut evenly.
  • Top with the remaining cheese and place the other tortillas (dressing side down) on top to create quesadillas.
  • Heat a skillet over medium heat and melt half the butter.
  • Cook one quesadilla for 2–3 minutes per side, pressing lightly, until the tortilla is golden brown and the cheese is melted.
  • Repeat with the second quesadilla, adding more butter if needed.
  • Slice into wedges and serve warm.

Notes

  • Substitute corned beef with pastrami for a slightly different flavor.
  • For extra crunch, use rye tortillas or sprinkle caraway seeds in the filling.
  • Serve with extra Thousand Island dressing or mustard for dipping.
