This Roast Beef Reuben recipe is a twist on the classic Reuben, featuring tender roast beef, tangy sauerkraut, melty Swiss cheese, and creamy Thousand Island dressing layered between buttery grilled rye bread. Perfect for a quick and hearty lunch or dinner!

Ingredients

  • 2 slices rye bread
  • 4 oz thinly sliced roast beef
  • 2 slices Swiss cheese
  • ⅓ cup sauerkraut, drained
  • 2 tbsp Thousand Island dressing
  • 1 tbsp butter, softened

Instructions

  • Spread Thousand Island dressing on one side of each slice of rye bread.
  • Layer roast beef, sauerkraut, and Swiss cheese between the slices of bread, dressing side facing inward.
  • Spread butter on the outer sides of both slices of bread.
  • Heat a skillet over medium heat and place the sandwich in the pan.
  • Cook for 3–4 minutes on one side until golden brown, then flip and cook the other side for another 3–4 minutes.
  • Remove from heat, slice in half, and serve warm.

Notes

  • Swap the roast beef with corned beef or turkey for a different variation.
  • For extra flavor, add a pinch of caraway seeds to the sauerkraut.
  • Serve with pickles or chips for a complete meal.
