1 lb shrimp, peeled and deveined
1 ½ cups long-grain white rice
3 cups chicken broth
1 tbsp olive oil
½ lb ground sausage
1 small onion, diced
1 green bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
1 tsp smoked paprika
1 tsp Cajun seasoning
½ tsp dried thyme
½ tsp black pepper
½ tsp salt
½ tsp cayenne pepper (optional)
2 green onions, sliced
2 tbsp fresh parsley, chopped
Instructions
Cook rice according to package instructions using chicken broth instead of water. Set aside.
Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned. Remove excess grease.
Add onion, bell pepper, celery, and garlic to the skillet. Sauté until softened.
Stir in shrimp and cook for 2-3 minutes until pink.
Add cooked rice, smoked paprika, Cajun seasoning, thyme, black pepper, salt, and cayenne. Stir well to combine.
Cook for another 2-3 minutes, allowing flavors to blend.
Garnish with green onions and parsley before serving.
