This Peach Feta Salad recipe is a refreshing and vibrant dish featuring juicy peaches, cherry tomatoes, fresh basil, and mint, all tossed with crumbled feta cheese and a simple homemade dressing. Perfect for summer gatherings, this salad is easy to prepare and full of flavor.

Ingredients

  • 3 large peaches, pits removed and cut into 6-8 wedges per fruit
  • 1 pint cherry tomatoes, halved
  • Half a small shallot, peeled and sliced thinly
  • 1/2 cup feta cheese, crumbled
  • Approximately 10 large leaves of fresh basil, chopped
  • Approximately 10 large leaves of fresh mint, chopped

Salad Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Juice of 1/2 a lemon
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  • Prepare the peaches by removing the pits and cutting them into wedges.
  • Halve the cherry tomatoes and thinly slice the shallot.
  • In a large salad bowl, combine the peaches, cherry tomatoes, shallot, feta cheese, basil, and mint.
  • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, honey, garlic powder, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately or refrigerate until ready to serve.

Notes

  • For a different flavor profile, substitute nectarines for peaches.
  • This salad can be made ahead and chilled, but add the dressing just before serving for the best texture.
