1.5 lbs beef stew meat, cubed
1.5 lbs baby potatoes, halved
4 tbsp unsalted butter, melted
4 garlic cloves, minced
1 tsp dried thyme
1 tsp dried rosemary
1 tsp paprika
Salt and black pepper, to taste
1 cup beef broth
1 tbsp olive oil
Fresh parsley, chopped (for garnish)
Instructions
In a skillet, heat olive oil over medium-high heat. Sear the beef bites until browned on all sides.
Transfer beef bites to the slow cooker.
Add halved potatoes to the slow cooker.
In a small bowl, mix melted butter, minced garlic, thyme, rosemary, paprika, salt, and pepper. Pour the mixture over the beef and potatoes.
Pour beef broth into the slow cooker.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender and potatoes are cooked through.
Garnish with fresh parsley before serving.
