Ingredients

Scale
  • 1.5 lbs beef stew meat, cubed

  • 4 tbsp unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

  • Salt and black pepper, to taste
  • 1 cup beef broth

  4. In a small bowl, mix melted butter, minced garlic, thyme, rosemary, paprika, salt, and pepper. Pour the mixture over the beef and potatoes.
  5. Pour beef broth into the slow cooker.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender and potatoes are cooked through.
  7. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, add a splash of Worcestershire sauce to the beef broth.
  • Use Yukon gold potatoes for a creamy texture, or red potatoes for a firmer bite.
