  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  • Prepare Muffin Batter:
    • Preheat the oven to 375°F (190°C).
    • In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
    • In another bowl, whisk together melted butter, eggs, buttermilk, and vanilla extract.
    • Combine the wet and dry ingredients, mixing just until combined.
  • Make Sour Cherry Filling:
    • In a small saucepan, combine sour cherries, sugar, lemon juice, and cornstarch.
    • Cook over medium heat until the mixture thickens, stirring constantly. Let cool.
  • Assemble and Bake:
    • Fill muffin cups with a layer of batter, add a spoonful of cherry filling, and cover with more batter.
    • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
