  • 1 tbsp sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 3/4 cup buttermilk

  • 1/4 cup honey

  • 1/4 cup melted butter

  • 1 egg

  • 1/2 cup corn kernels (fresh or frozen)

  • Oil for frying

  • Extra honey butter for serving (optional)

Instructions

  1. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, mix buttermilk, honey, melted butter, and egg.

  3. Combine wet and dry ingredients until just mixed. Fold in corn kernels.

  4. Heat oil in a deep fryer or heavy skillet to 350°F (175°C).

  5. Scoop tablespoon-sized portions of batter and carefully drop into hot oil.

  6. Fry until golden brown and crisp, about 2–3 minutes per side.

  7. Remove and drain on paper towels.
