  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 6 tablespoons unsalted butter, softened

  • 2/3 cup sugar (plus extra for sprinkling)

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/2 cup buttermilk

  • 1 cup fresh strawberries, hulled and halved

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 9-inch round cake pan.

  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.

  3. In another bowl, cream butter and sugar until light and fluffy.

  4. Beat in egg and vanilla extract.

  5. Alternate adding flour mixture and buttermilk to the butter mixture, starting and ending with flour.

  6. Spread batter into prepared pan and arrange strawberries on top, cut side down.

  7. Sprinkle with extra sugar.

  8. Bake for 20–25 minutes or until a toothpick comes out clean.

  9. Cool before serving.

Notes

  • You can substitute other berries or add a touch of lemon zest for extra flavor.
