  • 1/2 cup mozzarella cheese (shredded)
  • 1/4 cup parmesan cheese (grated)
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Butterfly each chicken breast by slicing it in half horizontally, but not all the way through.
  3. In a bowl, mix spinach, mozzarella, parmesan, and minced garlic.
  4. Stuff each chicken breast with the spinach mixture and secure with toothpicks.
  5. Season the chicken with salt, pepper, and olive oil.
  6. Heat a pan over medium-high heat, sear the chicken breasts for 2-3 minutes on each side until golden brown.
  7. Transfer to a baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.
  8. Remove toothpicks, slice, and serve!
