  • 1 tbsp olive oil
  • 1 white onion, chopped
  • 1 lb lean ground beef
  • 1 tbsp Italian seasoning
  • 2 tsp paprika
  • 2 tsp ground cumin
  • Salt and black pepper to taste
  • 4 cloves garlic, minced
  • 1 red bell pepper, cored and diced
  • 1 yellow bell pepper, cored and diced
  • 2 cups water
  • 1 15-ounce can chopped tomatoes
  • 1 tbsp Worcestershire sauce
  • 1 cup basmati rice, rinsed and drained
  • 1 cup shredded cheddar cheese
  • Chopped fresh parsley for serving

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Sauté onion until translucent.
  • Add ground beef, cooking until browned.
  • Stir in Italian seasoning, paprika, cumin, salt, and pepper.
  • Add garlic, red bell pepper, and yellow bell pepper. Cook until peppers are tender.
  • Stir in water, chopped tomatoes, Worcestershire sauce, and rice.
  • Bring to a boil, then reduce heat and simmer until rice is tender.
  • Transfer mixture to a baking dish, top with shredded cheddar cheese.
  • Bake in preheated oven until cheese is melted and bubbly, about 15-20 minutes.
  • Garnish with chopped parsley before serving.

Notes

  • Use any bell pepper colors you prefer.
  • Adjust seasoning to taste.
