Sweet Potato Casserole Recipe: Enjoy a delicious sweet potato casserole with creamy filling and crunchy topping. Perfect for holidays!

For the Casserole Filling:

  • 3 pounds sweet potatoes or yams, peeled, cut into cubes, and cooked (about 5 or 6 large)
  • ¼ cup brown sugar
  • ¼ cup unsalted butter or margarine
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 egg
  • ¼ cup milk (3.25% used here)
  • ¼ teaspoon salt (or to taste)

For the Topping:

  • 1 cup crushed cornflakes
  • ¼ cup chopped pecans
  • 1 tablespoon melted unsalted butter
  • 1 tablespoon packed brown sugar
  • 1 cup mini marshmallows

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large bowl, mash the cooked sweet potatoes.
  • Add brown sugar, butter, cinnamon, vanilla extract, egg, milk, and salt to the mashed sweet potatoes. Mix until well combined.
  • Transfer the mixture to a baking dish.
  • In a separate bowl, combine crushed cornflakes, chopped pecans, melted butter, and brown sugar.
  • Sprinkle the topping mixture over the sweet potato filling.
  • Bake for 25-30 minutes, or until the topping is golden brown.
  • Add mini marshmallows on top and bake for an additional 5-10 minutes, or until marshmallows are toasted.
  • Serve warm.

Notes

  • Adjust the sweetness by increasing or decreasing the amount of brown sugar.
  • Use dairy-free milk and margarine for a vegan version.
