  • 1 onion, diced
  • 1/2 tsp salt, and optional pepper
  • 3 tbsp oil, or spray for a fat-free option
  • 2 tsp minced garlic
  • 2 tbsp lime juice
  • 1 red bell pepper, diced
  • 1 can black beans, drained and rinsed, or 1 1/2 cups cooked black beans
  • Optional: 1 cup canned or cooked corn
  • 3/4 cup fresh cilantro, chopped (omit if desired)

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss chopped sweet potatoes and diced onion with oil, salt, and pepper.
  • Spread in a single layer on a baking sheet and roast for 25-30 minutes until tender.
  • In a large bowl, combine roasted sweet potatoes, onion, black beans, red bell pepper, corn (if using), garlic, lime juice, and cilantro.
  • Mix well and serve warm or chilled.

Notes

  • For a fat-free option, use oil spray instead of 3 tbsp oil.
