  • 1 ½ lbs ground beef (80/20)

  • ½ lb ground pork

  • 1 cup panko breadcrumbs

  • 2 eggs

  • ½ cup milk

  • 4 garlic cloves, minced

  • 1 tbsp fresh ginger, grated

  • 1 small onion, finely chopped

  • ½ cup gochujang (Korean chili paste)

  • ⅓ cup soy sauce

  • ¼ cup brown sugar

  • 2 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 1 tbsp toasted sesame seeds (for garnish)

  • 2 green onions, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a large bowl, combine ground beef, ground pork, panko, eggs, milk, garlic, ginger, onion, and half of the gochujang mixture.

  3. Mix gently until just combined; form into a loaf shape on the prepared baking sheet.

  4. In a separate bowl, mix remaining gochujang, soy sauce, brown sugar, rice vinegar, and sesame oil to make the glaze.

  5. Brush half the glaze over the meatloaf.

  6. Bake for 45 minutes, then brush with remaining glaze.

  7. Continue baking for another 15 minutes or until internal temperature reaches 160°F (71°C).

  8. Rest for 10 minutes before slicing. Garnish with sesame seeds and green onions.

Notes

  • Use ground turkey for a leaner version.

  • Gochujang level can be adjusted for heat preference.

  • Leftovers make great sandwiches.
