  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 large eggs
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • ¼ cup milk
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, diced
  • ½ cup strawberry jam
  • ¼ cup crushed shortbread cookies
  • Powdered sugar for dusting

Instructions

  • Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  • In a bowl, whisk flour, baking powder, and salt. Set aside.
  • In another bowl, beat eggs and sugar until light and fluffy. Add vanilla extract and milk.
  • Gently fold in the dry ingredients until just combined.
  • Spread batter evenly onto the prepared pan and bake for 10-12 minutes.
  • Remove from oven and roll the cake in a clean towel dusted with powdered sugar. Let cool.
  • Beat cream cheese and powdered sugar until smooth. Fold in whipped cream.
