  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 bag (30 oz) frozen diced hash brown potatoes
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped green onions (optional)
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350°F (175°C) and grease a large casserole dish.
  • In a skillet, cook the ground beef until browned. Drain excess fat.
  • Stir in taco seasoning and diced tomatoes with green chilies, and cook for another 2-3 minutes.
  • In a large bowl, mix together the hash browns, cream of chicken soup, sour cream, and 1 1/2 cups of cheese. Season with salt and pepper.
  • Spread the beef mixture evenly over the bottom of the casserole dish, then top with the potato mixture.
  • Sprinkle the remaining cheese on top.
  • Bake for 35-40 minutes until the casserole is bubbly and golden brown.
  • Garnish with chopped green onions if desired and serve.

Notes

  • You can use fresh potatoes if you prefer, just ensure they're par-cooked before assembling.
