Tex Mex Casserole is a delicious, hearty dish featuring lean ground beef, black beans, and melted cheddar cheese. This casserole is a perfect blend of savory and spicy flavors, ideal for a quick and satisfying weeknight dinner.

  • 1 lb lean ground beef (95%)
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 3/4 cup chopped tomatoes
  • 1/2 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup basmati rice, cooked
  • 2 cups cheddar cheese, grated
  • 1/4 cup green bell pepper, diced
  • Salt to taste
  • Black pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the diced onion and minced garlic to the skillet, cooking until softened.
  • Stir in the tomato paste, chopped tomatoes, and salsa. Cook for 5 minutes.
  • Mix in the black beans, cooked basmati rice, and diced green bell pepper. Season with salt and black pepper to taste.
  • Transfer the mixture to a casserole dish and top with grated cheddar cheese.
  • Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
