  • 1 lb large shrimp, peeled and deveined

  • 1 tbsp coconut oil

  • 3 cloves garlic, minced

  • 1-inch piece of ginger, grated

  • 1 can (13.5 oz) full-fat coconut milk

  • 1 tbsp red curry paste

  • 1 tbsp fish sauce

  • 1 tbsp brown sugar

  • Juice of 1 lime

  • Salt and pepper, to taste

  • Fresh cilantro, chopped (for garnish)

  • Cooked jasmine rice (for serving)

Instructions

  1. Heat coconut oil in a skillet over medium heat.

  2. Add garlic and ginger, sauté until fragrant (about 1 minute).

  3. Stir in red curry paste and cook for another 30 seconds.

  4. Pour in coconut milk, fish sauce, and brown sugar. Stir well and bring to a simmer.

  5. Add shrimp, season with salt and pepper. Cook until shrimp are pink and cooked through (about 4–5 minutes).

  6. Stir in lime juice.

  7. Serve over rice and garnish with fresh cilantro.
