  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: sour cream, guacamole, shredded cheese, cilantro

Instructions

  • In a small bowl, mix chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
  • Coat chicken slices with half the spice mixture and drizzle with 1 tablespoon olive oil.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  • Sear the chicken for 4-5 minutes per side until fully cooked. Remove and set aside.
  • Add bell peppers and onions to the same skillet, seasoning with the remaining spice mix. Sauté until tender-crisp, about 5-7 minutes.
  • Return the chicken to the skillet and drizzle with lime juice. Toss everything together.
  • Serve warm with tortillas and your choice of toppings.
