Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup chocolate chips (optional for extra chocolate goodness)

For the Chocolate Frosting:

  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1/2 cup cocoa powder
  • 1/4 cup whole milk
  • 2 tsp vanilla extract

For the Chocolate Ganache:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix the dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, and salt) in a large bowl.
  3. Add wet ingredients (eggs, milk, oil, vanilla extract), and beat on medium speed until smooth.
  4. Stir in boiling water carefully—batter will be thin. Pour evenly into the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool completely before frosting.
  6. Make the frosting by beating butter, powdered sugar, cocoa powder, and vanilla together. Add milk gradually until smooth.
  7. Frost the cake, then refrigerate for 30 minutes.
  8. Prepare ganache by heating heavy cream until simmering and pouring over chocolate chips. Stir until smooth.
  9. Pour ganache over the cake for a beautiful finishing touch. Let it set before serving.

Notes

  • To enhance the flavor, add espresso powder to the cake batter.
  • You can refrigerate the cake for up to 3 days or freeze it for longer storage.
