  • 2 lbs Yukon Gold potatoes, peeled and cubed

  • 1 cup mayonnaise

  • 2 tbsp yellow mustard

  • 1 tbsp apple cider vinegar

  • 1/2 cup celery, finely chopped

  • 1/4 cup red onion, finely chopped

  • 3 hard-boiled eggs, chopped

  • Salt and black pepper to taste

  • 1/2 tsp paprika (optional for garnish)

  • Fresh parsley for garnish (optional)

Instructions

  • Boil cubed potatoes in salted water for 10–12 minutes or until tender. Drain and let cool.

  • In a large bowl, mix mayonnaise, mustard, and apple cider vinegar.

  • Add celery, red onion, chopped eggs, salt, and pepper. Stir to combine.

  • Gently fold in the cooled potatoes. Mix until fully coated.

  • Chill in the refrigerator for at least 1 hour.

 

  • Garnish with paprika and parsley before serving.
