This hearty Vegetable Beef Soup recipe combines tender beef, fresh vegetables, and a savory broth for a comforting and flavorful one-pot meal.

Ingredients

  • 1 lb beef stew meat, cut into small pieces
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 potatoes, peeled and cubed
  • 1 cup green beans, trimmed
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef and brown on all sides. Remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant.
  3. Add carrots, celery, and potatoes, cooking for 3–4 minutes.
  4. Pour in beef broth, diced tomatoes, thyme, and oregano. Stir well.
  5. Return beef to the pot and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 30 minutes.
  7. Add green beans and cook for an additional 10–15 minutes.
  8. Season with salt and pepper to taste before serving.

Notes

  • For extra flavor, add a bay leaf during cooking and remove before serving.
  • Substitute vegetables based on seasonal availability or preference.
