Walking Taco Casserole combines ground beef, pinto beans, salsa, and cheesy Doritos for a flavorful, easy-to-make meal. Ideal for quick family dinners.

Ingredients

  • 1 ½ pounds (680g) ground beef
  • 2 cloves garlic, minced
  • 1 small red onion, minced
  • 15 ounces (425g) pinto beans, drained
  • ½ cup (125ml) salsa (mild or hot)
  • 10 ounces (425g) Rotel tomatoes
  • 4 tablespoons taco seasoning (store-bought or homemade)
  • 9.25 ounces (156g) Fritos or cheesy Doritos (½ bag)
  • 2 cups (250g) Mexican blend cheese, freshly shredded

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef over medium heat until browned.
  • Add minced garlic and red onion, sauté until softened.
  • Stir in pinto beans, salsa, Rotel tomatoes, and taco seasoning. Simmer for 5 minutes.
  • In a baking dish, spread half of the Fritos or Doritos.
  • Pour the beef mixture over the chips.
  • Top with remaining chips and sprinkle with shredded cheese.
  • Bake for 20-25 minutes or until cheese is melted and bubbly.
  • Serve warm, optionally garnished with sour cream, guacamole, or fresh cilantro.

  • Customize with your favorite toppings like jalapeños, olives, or green onions.
  • Substitute ground beef with ground turkey or chicken for a leaner option.
