4 medium cucumbers, peeled, seeded, and chopped
½ red onion, finely diced
Handful of chopped fresh mint
For the Dressing:
½ cup red wine vinegar
1 tablespoon extra virgin olive oil
1 tablespoon honey
1 teaspoon kosher salt (or ½ teaspoon sea salt)
Pinch of ground black pepper
Instructions
In a large bowl, combine watermelon cubes, chopped cucumbers, diced red onion, and fresh mint.
In a small bowl, whisk together red wine vinegar, extra virgin olive oil, honey, kosher salt, and ground black pepper until well combined.
