  • Graham cracker crumbs
  • Granulated sugar
  • Unsalted butter
  • Cream cheese
  • White chocolate chips
  • Fresh raspberries
  • Egg
  • Vanilla extract
  • Powdered sugar (optional, for topping)

Instructions

  • Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  • Combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the pan to form the crust.
  • Bake the crust for 8-10 minutes, then set aside to cool.
  • Melt white chocolate chips in a double boiler or microwave, stirring until smooth.
  • In a large bowl, beat cream cheese and sugar until smooth, then mix in melted white chocolate, egg, and vanilla extract.
  • Pour the cheesecake mixture over the cooled crust.
  • Gently swirl fresh raspberries into the cheesecake batter.
  • Bake for 30-35 minutes, until the cheesecake is set.
  • Let cool completely, then refrigerate for at least 2 hours before slicing into bars.
  • Dust with powdered sugar before serving, if desired.

Notes

  • For a richer flavor, use high-quality white chocolate.
