  • 2 large flour tortillas (or whole wheat wraps)
  • 2 cups cooked chicken, shredded or diced (grilled or rotisserie)
  • 1 cup shredded cabbage (green or purple)
  • 1 cup shredded carrots
  • ½ cup red bell pepper, thinly sliced
  • 2 green onions, chopped
  • ¼ cup cilantro, chopped (optional)
  • ½ cup crunchy chow mein noodles or crushed peanuts (optional)
  • ⅓ cup sesame dressing or Asian-style peanut dressing
  • 1 tbsp soy sauce (optional, for added flavor)

Instructions

  • Warm the tortillas in a dry skillet or microwave to make them pliable.
  • In a large bowl, combine chicken, cabbage, carrots, red bell pepper, green onions, cilantro, and chow mein noodles.
  • Drizzle sesame dressing over the mixture and toss until evenly coated. Add soy sauce if desired.
  • Spoon half of the salad mixture onto the center of each tortilla.
  • Fold the sides of the tortilla in, then roll it tightly into a wrap.
  • Slice in half and serve immediately, or wrap tightly for a portable meal.
