1 lb ground beef
4 medium potatoes, thinly sliced
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 small onion, diced
2 garlic cloves, minced
1/2 cup beef broth
1/4 cup sour cream
2 tbsp olive oil
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme (optional)
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Heat olive oil in a skillet over medium heat. Add ground beef, onion, and garlic, cooking until beef is browned. Season with salt, pepper, and paprika. Drain any excess grease.
Layer half of the sliced potatoes in the baking dish, overlapping slightly. Sprinkle with half of the thyme (if using).
Spread half of the cooked ground beef over the potatoes, followed by half of the cheddar and mozzarella cheeses.
Repeat the layers with the remaining potatoes, ground beef, and cheeses.
In a small bowl, whisk together beef broth and sour cream. Pour evenly over the casserole.
Cover with aluminum foil and bake for 40 minutes. Remove foil and bake for an additional 10-15 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
