Cheesy Ground Beef and Potatoes is the ultimate comfort food! This easy-to-make, one-pan dish combines seasoned ground beef, thinly sliced potatoes, and melty cheese for a satisfying family dinner. Perfect for busy weeknights or a cozy weekend meal.

  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup beef broth
  • 1/4 cup sour cream
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme (optional)

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Heat olive oil in a skillet over medium heat. Add ground beef, onion, and garlic, cooking until beef is browned. Season with salt, pepper, and paprika. Drain any excess grease.
  • Layer half of the sliced potatoes in the baking dish, overlapping slightly. Sprinkle with half of the thyme (if using).
  • Spread half of the cooked ground beef over the potatoes, followed by half of the cheddar and mozzarella cheeses.
  • Repeat the layers with the remaining potatoes, ground beef, and cheeses.
  • In a small bowl, whisk together beef broth and sour cream. Pour evenly over the casserole.
  • Cover with aluminum foil and bake for 40 minutes. Remove foil and bake for an additional 10-15 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
  • Let cool for 5 minutes before serving.
