Ingredients

  • 4 cups shredded chicken
  • 4 cups cornbread or other cubed dried bread
  • ⅓ cup chopped celery
  • 1 cup chopped onion
  • 1 can cream of onion soup
  • 1 ½ cups chicken broth
  • 2 tablespoons butter
  • 1 teaspoon poultry seasoning
  • ½ teaspoon dried sage
  • Salt and pepper to taste

Gravy Ingredients:

  • ¼ cup unsalted butter
  • 2 cups chicken broth
  • ¼ cup heavy cream
  • ¼ cup flour
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine shredded chicken, cubed cornbread, chopped celery, and chopped onion.
  • In a separate bowl, mix cream of onion soup, chicken broth, melted butter, poultry seasoning, dried sage, salt, and pepper.
  • Pour the soup mixture over the chicken and cornbread mixture, stirring until well combined.
  • Transfer the mixture into a greased casserole dish.
  • Bake in the preheated oven for 30-35 minutes or until golden brown and heated through.
  • For the gravy, melt butter in a saucepan over medium heat.
  • Whisk in flour and cook until lightly browned.
  • Gradually whisk in chicken broth and heavy cream, cooking until thickened.
  • Season with salt and pepper to taste.
  • Serve the casserole with the homemade gravy on top.

  • For added flavor, you can use homemade chicken broth.
