  • For The Chicken:
    • 1 ½ pounds boneless, skinless chicken thighs (700g, around 6-8 fillets)
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • ½ teaspoon dried thyme
    • ½ teaspoon dried rosemary
    • ½ teaspoon salt
    • ¼ teaspoon cracked black pepper
    • 2 tablespoons olive oil
  • For The Sauce:
    • 1 tablespoon butter
    • 8 ounces brown mushrooms (250g), sliced
    • 4 cloves garlic, minced (or 1 tablespoon minced garlic)
    • 1 tablespoon fresh parsley, chopped
    • ½ - 1 teaspoon dried thyme (adjust to your taste)
    • ½ - 1 teaspoon dried rosemary
    • 1 ½ cups thickened cream or heavy cream (evaporated milk or half and half can also be used)
    • ½ cup fresh shredded parmesan cheese

Instructions

  • Season chicken thighs with onion powder, garlic powder, thyme, rosemary, salt, and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Cook the chicken thighs until golden brown on both sides and cooked through. Remove and set aside.
  • In the same skillet, melt butter and sauté mushrooms until tender. Add garlic and cook until fragrant.
  • Stir in parsley, thyme, rosemary, and heavy cream. Bring to a simmer.
  • Add parmesan cheese, stirring until melted and the sauce thickens.
  • Return chicken to the skillet, coating it with the sauce. Cook for a few more minutes until heated through.
  • Serve hot, garnished with extra parsley if desired.

Notes

  • Adjust the amount of thyme and rosemary in the sauce according to your taste preference.
  • For a lighter option, use half and half or evaporated milk instead of heavy cream.
