  • 2 chicken breasts (cut into bite-sized pieces)
  • 12 oz penne or spaghetti
  • 2 tbsp olive oil
  • 3 garlic cloves (minced)
  • 1 small onion (diced)
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream or milk (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (for garnish)
  • Fresh parsley (chopped, for garnish)

Instructions

  • Cook pasta according to package instructions. Reserve 1/2 cup pasta water before draining.
  • Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
  • In the same skillet, sauté onion and garlic until softened.
  • Add diced tomatoes, tomato paste, oregano, basil, red pepper flakes, and chicken broth. Stir well and simmer for 10 minutes.
  • Stir in heavy cream (if using) for a creamy texture.
  • Add the cooked pasta and chicken to the skillet. Toss to coat, adding reserved pasta water if needed to adjust the consistency.
  • Garnish with Parmesan cheese and parsley before serving.
