2 chicken breasts (cut into bite-sized pieces)
12 oz penne or spaghetti
2 tbsp olive oil
3 garlic cloves (minced)
1 small onion (diced)
1 can (14 oz) diced tomatoes
1/4 cup tomato paste
1 tsp dried oregano
1 tsp dried basil
1/4 tsp red pepper flakes (optional)
1/2 cup chicken broth
1/4 cup heavy cream or milk (optional)
Salt and pepper to taste
1/4 cup grated Parmesan cheese (for garnish)
Fresh parsley (chopped, for garnish)
Instructions
Cook pasta according to package instructions. Reserve 1/2 cup pasta water before draining.
Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
In the same skillet, sauté onion and garlic until softened.
Add diced tomatoes, tomato paste, oregano, basil, red pepper flakes, and chicken broth. Stir well and simmer for 10 minutes.
Stir in heavy cream (if using) for a creamy texture.
Add the cooked pasta and chicken to the skillet. Toss to coat, adding reserved pasta water if needed to adjust the consistency.
Garnish with Parmesan cheese and parsley before serving.
