  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for rolling)
  • 24 Hershey's chocolate kisses, unwrapped

Instructions

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until smooth and creamy.
  • Beat in the egg and vanilla extract until combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture.
  • Roll dough into 1-inch balls and roll each ball in granulated sugar.
  • Place on the baking sheet about 2 inches apart and bake for 8-10 minutes, until the edges are slightly golden.
  • Remove from the oven and immediately press a chocolate kiss into the center of each cookie.
  • Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Be sure to press the chocolate kiss into the cookie as soon as it comes out of the oven for a perfectly melted look. If you prefer a softer cookie, slightly underbake them.
