Ingredients

Scale

For the Pork Chops:

  • 4 bone-in pork chops
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 cup buttermilk
  • 1 egg
  • Vegetable oil for frying

For the Bacon Gravy:

  • 4 slices bacon, chopped
  • 2 tablespoons bacon drippings
  • 2 tablespoons butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • Salt and pepper to taste

Instructions

  • Prepare the Pork Chops: In a bowl, mix flour, salt, pepper, paprika, garlic powder, and onion powder. In another bowl, whisk buttermilk and egg.
  • Dredge the Pork Chops: Dip each pork chop in the buttermilk mixture, then coat in the flour mixture. Let rest for 5 minutes.
  • Fry the Pork Chops: Heat oil in a skillet over medium-high heat. Fry pork chops for 4-5 minutes per side until golden brown and cooked through. Drain on paper towels.
  • Make the Bacon Gravy: In the same skillet, cook chopped bacon until crispy. Remove bacon and set aside. Add butter to the drippings, then whisk in flour and cook for 1-2 minutes.
  • Finish the Gravy: Gradually whisk in milk, stirring constantly until thickened. Season with salt and pepper. Stir in crispy bacon.
  • Serve: Pour bacon gravy over fried pork chops and enjoy!

Notes

  • For extra crispy chops, double-dip in the buttermilk and flour mixture.
  • Use a meat thermometer to ensure pork reaches 145°F internally.
  • Serve with mashed potatoes or biscuits for a complete meal.
