  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tbsp all-purpose flour
  • 2 tsp paprika
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 12 oz egg noodles (for serving)
  • Fresh parsley for garnish

Instructions

  • Cook egg noodles according to package instructions, drain, and set aside.
  • Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and 1 tsp paprika. Sear chicken until golden brown, about 5-6 minutes. Remove and set aside.
  • In the same skillet, add onions and garlic, cooking until softened, about 3 minutes. Add mushrooms and sauté until tender, about 5 minutes.
  • Sprinkle flour over the mushroom mixture and stir to combine. Gradually pour in chicken broth, stirring constantly to avoid lumps.
  • Stir in sour cream, Dijon mustard, and remaining paprika. Let the sauce simmer for 3-5 minutes until thickened.
  • Return chicken to the skillet and cook for another 5 minutes, ensuring the chicken is heated through.
  • Serve over egg noodles and garnish with fresh parsley.
