  • 2 lbs boneless, skinless chicken breasts
  • 1 tbsp Cajun seasoning
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 8 oz cream cheese, softened
  • 1 cup grated Parmesan cheese
  • 12 oz penne pasta
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Coat chicken breasts in Cajun seasoning and place them in the crock pot.
  2. Add sliced bell peppers, minced garlic, chicken broth, and heavy cream to the crock pot.
  3. Cover and cook on low for 4-5 hours or until the chicken is tender.
  4. Remove chicken, shred or slice, and return to the crock pot.
  5. Stir in softened cream cheese, Parmesan cheese, and cooked pasta. Mix until combined.
  6. Let cook for an additional 20-30 minutes, stirring occasionally, until the sauce thickens.
  7. Serve hot and garnish with fresh parsley, if desired.
