Ingredients

  • Lasagna Noodles: 9 noodles
  • Olive Oil: 1 tbsp
  • Onion: 1 large, chopped
  • Garlic: 3 cloves, minced
  • Pasta Sauce: 4 cups
  • Italian Seasoning: 2 tsp
  • Spinach: 10 oz frozen, thawed and squeezed
  • Ricotta Cheese: 15 oz
  • Mozzarella Cheese: 4 cups, shredded (divided)
  • Parmesan Cheese: ½ cup, shredded (divided)
  • Egg: 1
  • Fresh Parsley: 1 tbsp
  • Salt: ½ tsp

Instructions

  • Prep the Noodles: Cook lasagna noodles according to package instructions. Drain and set aside.
  • Make the Sauce: Heat olive oil in a pan over medium heat. Sauté chopped onions and minced garlic until fragrant. Add pasta sauce and Italian seasoning, and simmer for 10 minutes.
  • Prepare the Filling: In a bowl, mix thawed spinach with ricotta cheese, 2 cups of mozzarella, ¼ cup of parmesan, egg, parsley, and salt.
  • Assemble the Lasagna: Spread a layer of sauce in a baking dish. Add a layer of noodles, then the spinach-ricotta mixture. Repeat layers, ending with noodles and sauce.
  • Add Cheese Topping: Sprinkle remaining mozzarella and parmesan over the top.
  • Bake: Cover with foil and bake at 375°F for 25 minutes. Uncover and bake for an additional 15 minutes until the cheese is golden and bubbly.
