  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 cup unsalted butter, melted
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 400°F (200°C). Grease a baking dish.
  • In a large bowl, mix melted butter, olive oil, garlic, Parmesan, salt, pepper, paprika, oregano, and thyme.
  • Toss potatoes in half of the mixture and spread them in the baking dish.
  • Coat chicken with the remaining mixture and place it on top of the potatoes.
