4 boneless, skinless chicken breasts
1.5 lbs baby potatoes, halved
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 cup unsalted butter, melted
2 tbsp olive oil
2 tbsp fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 400°F (200°C). Grease a baking dish.
In a large bowl, mix melted butter, olive oil, garlic, Parmesan, salt, pepper, paprika, oregano, and thyme.
Toss potatoes in half of the mixture and spread them in the baking dish.
Coat chicken with the remaining mixture and place it on top of the potatoes.
Bake for 35-40 minutes or until the chicken is fully cooked and potatoes are tender.
Garnish with fresh parsley and serve hot.
