    • 8 ounces rotini or medium pasta
    • 1 ½ cups frozen mixed vegetables (peas, carrots, corn)
  • Meat and Aromatics
    • 1 pound lean ground beef
    • 1 small onion, diced
  • Tomato Sauce Base
    • 14 ounces pasta sauce (canned/jarred)
    • 14 ounces diced tomatoes, lightly drained (1 can)
    • 2 tablespoons tomato paste
    • 1 tablespoon Worcestershire sauce
  • Seasonings
    • ½ teaspoon dried oregano
    • ½ teaspoon dried basil
    • ½ teaspoon garlic powder
    • ¼ teaspoon each salt and pepper (or to taste)
  • Cheese Topping
    • 1 ½ cups shredded cheddar-mozzarella blend

Instructions

  • Cook the Pasta: Preheat the oven to 350°F (175°C). Cook the rotini or pasta according to package instructions until al dente. Drain and set aside.
  • Prepare the Meat and Vegetables: In a large skillet, cook the lean ground beef over medium heat until browned. Add the diced onion and cook until softened.
  • Make the Sauce: Stir in the pasta sauce, diced tomatoes, tomato paste, Worcestershire sauce, dried oregano, dried basil, garlic powder, salt, and pepper. Simmer for 5-10 minutes.
  • Combine and Bake: Mix the cooked pasta and frozen vegetables into the sauce. Transfer to a baking dish and sprinkle the shredded cheddar-mozzarella blend on top.
  • Bake: Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  • Serve: Let the casserole cool for a few minutes before serving. Enjoy!
