  • 12 oz linguine or spaghetti
  • 2 tbsp olive oil
  • 1 lb large shrimp, peeled and deveined
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 garlic cloves, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  • Cook the pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Season shrimp with salt and pepper and cook for 2-3 minutes per side until pink and cooked through. Remove and set aside.
  • In the same skillet, add minced garlic and red pepper flakes. Sauté for 1 minute until fragrant.
  • Stir in the sun-dried tomatoes, heavy cream, and chicken broth. Simmer for 2-3 minutes until slightly thickened.
  • Add the Parmesan cheese and stir until melted and creamy. Adjust consistency with reserved pasta water if needed.
  • Toss the cooked pasta and shrimp into the skillet, coating everything in the sauce.
  • Garnish with fresh basil and serve immediately.
