  • 1 pound lean ground beef

  • 1 ounce package taco seasoning (preferably low sodium)
  • 2 1/2 cups beef broth (preferably low sodium)
  • 1 can (10 ounces) Rotel tomatoes
  • 2 Tablespoons tomato paste
  • 1 1/2 cups long grain white rice
  • 2 cups shredded cheddar cheese
  • Optional: Black beans, corn, chopped bell peppers

Instructions
